Fresh lemon juice or white wine

3 tbsp butter or butter substitute

1 onion, chopped

3 celery ribs, chopped

3 carrots, chopped

1 small bunch of fresh dill

4 sprigs of fresh tarragon

2 bay leaves

Peel from ½ a lemon, sliced

15 peppercorns

2 cloves


¼ cup butter or butter substitute

3 tbsp all-purpose baking flour (more or less depending)

2 cups court bouillon from your poached fish—or vegetable broth

3 tbsp whole grain Dijon mustard

¼ cup white wine

2 tbsp minced fresh dill

¾ tsp salt, or more to taste

Juice of 1 fresh lemon

1 cup mayonnaise (pick a good quality organic one if possible—or if you know how to make homemade, event better!)

Juice from 1 fresh lemon

Zest from ½ fresh lemon peel

3 tbsp fresh dill, minced

2 tbsp fresh parsley leaves, minced

½ tsp fresh tarragon, minced
