1/4-1/2 of a preserved lemon, flesh discarded, rinsed thoroughly, and chopped fine

1/3 cup olive oil

juice from 1/2 lemon

add 1/4 cup soft creamy fresh goat cheese, crumbled

1/2 cup mint leaves, roughly torn

1/4 cup parsley, roughly torn
