Ingredients

Your leftover Shredded Tarragon Chicken (or other shredded chicken; 1/2 to 1pd depending on how meaty you like your burritos)

A Couple Swirls of Olive Oil for Cooking

3/4 Cup Grape Tomatoes, Halved

1 Lime, Juiced

2 Avocados, cubed

1 Can of Black Beans, Rinsed and Drained

1 Onion, Chopped

1 Cup of Cooked Rice

3 Cloves of Garlic

3 tsps (or 1 small handful) of Cilantro

1 cup of chopped pepper (green, red, and/or yellow works)

2 Green Onions, Chopped

1/4 Cup +1/4 Cup Sour Cream

1 Cup of your Favorite Salsa

1 tsp + 1 tsp of Cumin

1 tsp + 1 tsp of Chili Powder

1/2 tsp of Salt

Cayenne to taste

1 Tbsp of Soy Sauce

2 Cups of Shredded Cheddar Cheese
