1 cup Ancient Harvest Quinoa flakes

1 cup sorghum flour (or fine brown rice flour if you cannot find sorghum)

1/4 cup millet flour

1 tbsp tapioca starch or potato starch (not potato flour!)

1 tsp xantham gum

1/2 tsp fine sea salt

1 tsp Baking Soda

1 1/4 cup organic Light Brown Sugar

1 tsp Cinnamon

1/2 tsp Nutmeg

1/4 tsp Ground cloves

1/2 cup Spectrum Organic Shortening

1 cup canned pumpkin

1 tbsp Bourbon Vanilla Extract

1 tbsp Pure Maple Syrup

1/4 tsp light tasting Vinegar or lemon juice

1 cup dairy free dark chocolate chips

1/2 cup golden or dark raisins or currants

1/2 cup Chopped Nuts, optional such as pecans or walnuts
