1 ounce crumbled feta cheese (optional)

4 eggs

2-3 cups spinach leaves , washed and roughly chopped

1/2 medium onion , diced

2-3 tablespoons pine nuts

pepper

2 slices bacon , chopped

1 tablespoon olive oil

salt

2 small new potatoes , sliced 1/16-inch thick (I use a v-slicer)
