Ingredients

Olive oil spray

1 1/2 pounds pork tenderloin, cut into 3-inch cubes, blotted dry

Freshly ground pepper

2 teaspoons chile powder (preferably New Mexican)

1 1/2 teaspoons oregano

2 bay leaves

3 garlic cloves, minced

1 red onion, chopped

1 red bell pepper, stemmed, seeded, chopped

6 Anaheim chiles, charred, stemmed, seeded, chopped

4 carrots, peeled, cut into 3-inch lengths

1 russet potato, peeled, cut into 3-inch cubes

1 yam, peeled, cut into 3-inch cubes

2 ears of corn, husked, cut into 3-inch lengths

1 chipotle chile

2 cups chicken broth

1 pumpkin, 3 to 4 pounds (choose a round rather than a tall one)

2 tablespoons melted butter

2 tablespoons maple syrup or brown sugar

1/2 teaspoon salt
