3/4 cup water

2 tablespoons olive oil

10 medium cloves garlic, smashed

1/8 teaspoon dried oregano

1/2 teaspoon kosher salt

1 package (5 pieces, 3 to 3 1/2 pounds) two-bone special pork rib racks, such as Tracy's Rib Rack cut (see headnote)

1 cup ketchup

1 cup water

1/2 cup cider vinegar

1/3 cup Worcestershire sauce

1/4 cup Dijon-style mustard

1/4 cup unsalted butter, melted

1/4 cup light brown sugar

2 tablespoons freshly squeezed lemon juice

1 teaspoon hot pepper sauce, such as Tabasco brand
