  • 3 medium-large tomatoes, coarsely chopped
  • 3 ozs fresh mozzarella, diced
  • 1 Tbsp extra virgin olive oil
  • 1 1/2 Tbsps balsamic vinegar
  • Salt and freshly ground pepper, to taste
  • handful of fresh basil leaves
