Ingredients for 6 servings

1 stick (4 ounces) butter, cut into small pieces

2 large onions, thinly sliced

1 fresh or dried bay leaf

1 pound chicken livers, cleaned, trimmed and patted dry

1/2 teaspoon ground thyme

Salt and freshly ground pepper

Warm sliced baguette or toasted, thinly sliced, sprouted wheat bread triangles

Cornichons, grainy mustard, minced shallots and capers, for garnish (optional)
