1 teaspoon olive oil

1 pound lean italian-style turkey sausage (mild or hot), cut into 4" pieces

1 large red bell pepper, chopped

1 small onion, chopped

6 large mushrooms (6 ounces), coarsely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon dried thyme

1 can (15 ounces) crushed tomatoes

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 large large ripe tomato, chopped or cut into thin pieces (optional)

3/4 cup (3 ounces) shredded mozzarella cheese
