½ cup goat cheese

Salt and pepper, to taste

¾ cup flour

chopped basil, to taste (optional)

1/3 cup extra virgin olive oil

2 tablespoons fresh lemon juice

Grey salt (or sea salt) and fresh ground black pepper

3-4 pounds vine-ripened tomatoes, preferably a colorful mixture and various sizes

4 handfuls washed & dried salad greens
