1/4 cup packed cilantro leaves, thinly sliced

1 small chipotle chili pepper in adobo sauce, chopped

1 tablespoon adobo sauce from jar of chipotle chilies

1/4 teaspoon salt

QUESADILLAS:

4 boneless, skinless chicken breasts, sliced thinly

1 teaspoon salt

1 teaspoon ground cumin

1/4 teaspoon cayenne

1/4 teaspoon freshly ground black pepper

8 gluten-free tortillas (9")

1 red bell pepper, thinly sliced

2 cups white mushrooms, thinly sliced

1/2 cup fat-free ricotta cheese
