  • 4 c Magic Wild Rice
  • 1 c onion, chopped
  • 1/4 c sun dried tomatoes packed in oil, finely chopped
  • 1 lb asparagus, trimmed and chopped into 1/2 inch pieces
  • 1 c frozen peas
  • 1 c frozen shelled edamame (soybeans)
  • Juice and zest of one lemon
  • 1/2 c fresh basil, chopped
  • 1/4 c fresh parsley, chopped
  • 1/4 c grated Romano cheese

Lisa - I made this salad live on ABC today and it was a huge hit. Crew devoured it after the show. You have a zillion new rice salad fans.
