Ingredients for 8 servings

Freshly ground black pepper

6 lightly packed cups of bite-size chicory and escarole (or other winter greens of your choice)

1 recipe black olive Vinaigrette  

2 logs (1/4 lb. each) fresh goat cheese

1 large clove garlic, cut in half lengthwise

2 tsp. fresh thyme leaves, lightly chopped

1 large Belgian endive (about 1/2  lb.)

8 slices (1/2-inch thick) baguette or thin italian loaf, cut on the diagonal

1/4 cup plus 2 tsp. extra-virgin olive oil

sea salt or kosher salt
