I make this every year around this time of year and this year I'm using a home grown pumpkin. I normally make it in a shallow roasting tray and cut in half for two cakes and freeze without frosting in cake slabs and defrost and then add thick frosting of lemon and icing sugar. My kids each take one to nursery/school for the teachers. Goes down a treat.

500.0g (peeled weight) pumpkins or butternut squash flesh, grated

85.0g butter , softened

1.0 tbsp orange juice

Ingredients For the cake

½ tsp salt

zest 1 orange and juice of half

300.0g self-raising flour

2.0 tsp bicarbonate of soda

200.0g butter , melted

zest 1 orange

4 eggs , beaten

3.0 tsp mixed spice

100.0g icing sugar , sifted


300.0g light muscovado sugar

200 g pack soft cheese
