¼ cup + 1 tablespoon of Thai green curry paste

1 cup of coconut cream

4 cups of coconut milk

3 tablespoons of Red Boat fish sauce

1 pound carrots, peeled and cut into 1½ pieces

1 large onion, cut medium

¼ cup applesauce

1 pound of mixed frozen veggies

Kosher salt

Freshly ground black pepper

Juice from one lime

½ cup basil leaves, coarsely chopped

½ cup mint leaves, coarsely chopped
