I made this and liked it but I didn't roast a pumpkin. I used canned and it was fine. I used scallions and added a little ginger. Tasty.

I love this!! I used coconut oil instead of olive oil and added a little red chilli pepper. Yum.

1 bunch scallions,diced

2 tablespoons curry powder

2-3 cups veggie broth

¼-1/2 cup coconut milk

salt, if needed

½ tablespoon olive oil

¼ teaspoon salt
