Ingredients

4 bell peppers–about 1 1 /2 lbs (1 each green, red, yellow and orange makes a nice color combination)

1 large eggplant (2 small)–about 2 lbs

2 large red-ripe tomatoes

1 /2 Cup shredded mozzarella cheese

1 /4 Cup olive oil

1 TB. BASIL

1 /2 tsp. TURKISH OREGANO

1 /2 tsp. THYME

2 cloves finely minced GARLIC ( 1 /2 tsp GARLIC GRANULES)–optional

1 /4 tsp. salt

1 TB. balsamic or red wine vinegar

1 /2 tsp. freshly ground BLACK PEPPER
