2 lb yellow onions, peeled and sliced in half, then cut across the grain into half circles

1 stick (8 tablespoons) unsalted butter

1/4 cup sugar

1-2 tbsp ricotta forte, depending upon your fortitude as regards fermented cheese that bites back

1 1/2 tbsp grated pecorino-Romano
