Ingredients for 2 servings

1/3 cup finely chopped green onions

2 tablespoons chopped fresh parsley leaves

10 cups water

1 cup chopped celery

1 bay leaf

1 1/4 teaspoons salt

1/2 pound smoked sausage, cut lengthwise into quarters then crosswise into 1/4-inch pieces

2 cups chopped onions

2 tablespoons vegetable oil or butter

1 ham bone or smoked ham hock

6 ears fresh corn

2 teaspoons Essence, recipe follows

5 sprigs fresh thyme, tied in a bundle with kitchen twine

2 cups peeled, seeded and chopped tomatoes
