I made this again but made my own curry mix without the turmeric or fenugreek. So yummy. I shared the recipe with friends at work.

Ok. I made this yummy dish. The fresh cilantro really makes it come alive. I used Patak's mild curry paste but it has too much turmeric in to for me. Next time I make this; I will make my own curry. Also serving this with naan bread would be awesome.

Ingredients for 2 servings

400.0g can reduced-fat coconut milk

small bunch coriander , roughly chopped

2.0 tbsp Madras curry paste

1 red pepper , halved, deseeded and roughly chopped into chunks

1 large butternut squash (600g/1lb 5oz peeled weight), chopped into medium size chunks
