1 1/2 pounds cooked salmon, skin removed, flaked and picked over for bones

1 large egg

1/4 cup mayonnaise + more as needed

1 tablespoon Dijon mustard

1/2 teaspoon lemon zest

1 tablespoon lemon juice

4 green onions, minced

2 teaspoons minced shallot, optional

1 tablespoon chopped fresh dill or 1 teaspoon dried dill

3 to 4 tablespoons fine breadcrumbs or panko bread crumbs

1/4 teaspoon cayenne pepper, or to taste

1/2 to 3/4 teaspoon kosher salt, or to taste

1/2 teaspoon freshly ground black pepper, or to taste

1 1/2 cups panko bread crumbs

1/4 cup canola oil

-- Optional garnishes: Lemon wedges, aioli, or the Lemon Cucumber Yogurt Sauce (see recipe, Page H4)
