1 cup cubed stale bread

1 cup milk

2 pounds ground lamb

2 eggs

1 onion, finely diced

3/4 cup pine nuts, toasted

2 teaspoons kosher salt, or to taste

-- Freshly ground black pepper

2 teaspoons finely minced fresh rosemary or combination of rosemary and mint

-- Olive oil

Tomato sauce

1 cup finely diced onion

2 garlic cloves, thinly sliced

4 to 5 cups diced canned tomatoes with juice (from one 28-ounce can and one 14-ounce can)

-- Handful shredded mint and/or basil
