12 ounces Italian chicken sausage (I used Spicy), sliced diagonally

12 ounces dried white beans

8 cups water

1 tablespoon + 2 teaspoons kosher salt, divided

freshly ground black pepper

5 to 6 cloves garlic

2 leeks, trimmed, well cleaned and thinly sliced

2 large carrots, peeled and cut into 1" pieces

2 celery ribs, sliced into 1/2" pieces

1 small head cabbage, chopped into 1" pieces

1 tablespoon dried thyme

1/4 cup fresh parsley, chopped

2 bay leaves

1 28-ounce can diced tomatoes (3 cups)

2 cups reserved bean cooking liquid
