8 small new red potatoes

1/8 pound string beans, trimmed

1 1/2 teaspoons Dijon mustard

1 1/2 teaspoons lemon juice

1 1/2 teaspoons white wine vinegar

Salt and pepper

1/2 cup extra-virgin olive oil

1/2 tablespoon chopped fresh tarragon

1/2 tablespoon chopped flat-leaf parsley

1/6 ounce can chunk light tuna in water, drained

10 pitted nicoise or kalamata olives

2 tablespoons capers in brine, drained

2 large eggs, hard-boiled and peeled
