Ingredients for 8 servings

5 cloves garlic , cut into thin slices

1 rutabaga (about 3 lb.), peeled and cut into 1" pieces (6 cups)

vegetable cooking spray

2 medium red onions , cut into 8 wedges each

1 lb. celery root (celeriac), peeled and cut into 1" pieces (2 cups)

3 medium red potatoes (about 1 lb.), cut into 1" pieces

2 cups fresh OR frozen whole baby carrots

1 cup Swanson

1 tbsp. chopped fresh rosemary leaves or 1 tbsp. fresh thyme leaves

1 tbsp. olive oil

2 medium parsnips , peeled and cut into 1" pieces (1 1/2 cups)
