1 globe eggplant (about 1 pound)

2 1/2 teaspoons salt, or to taste

1 large onion

6 garlic cloves

4 roma tomatoes

6 tablespoons olive oil

2 cups tomato sauce

1 pint large-curd cottage cheese

1 cup grated Parmesan cheese (optional)
