2 tbsp. brown sugar

3/4 tsp. ground cinnamon

1/4 tsp. chipotle chili powder

1/8 tsp. ground cloves

1-15.5 oz. can diced tomatoes

3 tbsp. cocoa powder

3 tbsp. natural creamy peanut butter

2 cups vegetable broth

16 corn tortillas, warmed

2 large sweet potatoes

1/4 cup chopped cilantro

1-12 oz. package of extra firm tofu, pressed for 30 minutes, drained, and diced

1/2 tbsp. virgin coconut oil or vegetable oil

1 clove of garlic, minced

1/2 tbsp. ground cumin

1/2 tsp. salt

1 c. queso fresco, crumbled
