Ingredients for 4 servings

2 tablespoons extra virgin olive oil (EVOO)

1 onion, chopped

2 cloves garlic, chopped

Salt and pepper

1/2 cup orzo pasta

1 1/2 cups rice

1 teaspoon ground turmeric

2 pinches saffron threads

1/2 cup white wine

2 cups chicken stock

2 pounds mussels, scrubbed and debearded

1 cup frozen peas

1/3 cup grape tomatoes (a generous handful), quartered

1/3 cup flat leaf parsley (a generous handful), coarsely chopped
