  • 4 chicken legs (skinned, deboned, meat only; bones and skin used to make stock)
  • 1 bunch Italian parsley (washed, finely chopped)
  • 1/2 yellow onion (washed, peeled, thinly sliced)
  • 2 garlic cloves (peeled, finely chopped)
  • 2 cups chicken stock or water
  • 1 tsp sweet butter
  • 1 Tbsp olive oil
  • Sea salt and pepper
