Easy and tasty. I used extra sharp cheddar and did the 8 eggs, full cup (more than a cup) cheese and whole milk. Made for a breakfast potluck and it was destroyed. You could add more stuff, but I thin with the leeks it's nice that it's a little more simple.

Ingredients

8 cup challah bread cubes (1 inch cubes)

2 cup broccoli florets, blanched

1 x leek, halved and cut into 1/2 inch pieces

4 x eggs

6 x egg whites

1 1/2 cup low fat milk

1/2 cup shredded cheddar cheese

1 tbsp olive oil

salt and pepper
