Ingredients for 8 servings

1 package (8 oz) tempeh, diced medium

1 large yellow onion, diced medium

1 x green bell pepper, diced medium

1 large Carrot

3 cloves Garlic

1 tbsp olive oil plus 2 teaspoons

2 tsp soy sauce

3 tbsp Chili Powder

2 tsp Cumin

2 tsp fresh oregano, chopped

1 1/2 tsp salt

Couple of generous dashes fresh black pepper

15 oz can pinto beans, drained

1 cup good dark beer

18 oz can diced tomatoes

3 tbsp Tomato Paste

1 1/2 cup water or veg broth

2 tsp pure maple syrup

Juice of 1/2 a lemon

Handful fresh cilantro, chopped
