2 teaspoons fresh ginger , finely chopped

2 garlic cloves , minced

1/4 cup chopped fresh cilantro (optional)

3 tablespoons seasoned rice vinegar

2 green onions , finely chopped, including tops

1 (8 ounce) package soba noodles (I like to use 100% buckwheat)

1/2-1 fresh jalapeno pepper, seeded and finely chopped
