1 cup pink or red lentils, picked over, washed and drained (see Note)

1/2 teaspoon turmeric

1 teaspoon salt, or to taste

4 cups water

Tempering oil:

2 1/2 tablespoons canola oil

1 1/4 teaspoons cumin seeds

2 whole dried red chiles

1/2 teaspoon cayenne pepper

Juice of 1/2 lime or lemon
