Please, no parsley, no wine, no garlic and no oil. The "real carbonara" is as good as its own semplicity and little ingredients. Sorry, I'm a "purist"!

Ingredients for 4 servings

2 eggs

3 ounces parmesan cheese

1/2 cup loosely packed flat-leaf parsley leaves

1/4 teaspoon freshly ground black pepper, plus more for garnish

1/4 pound pancetta or thin-cut bacon

2 cloves garlic

3 tablespoons olive oil

1/2 cup dry white wine

1 tablespoon salt

1 pound spaghetti or spaghettini
