1 large onion, diced

3 garlic cloves, minced

1 can (28 oz.) diced Italian style tomatoes, drained (reserve 1/3 cup juice)

1 teaspoon dried basil

5 cups finely chopped fresh spinach

Black pepper to taste

1 cup shredded light or fat free mozzarella cheese
