1 six-bone center-cut pork loin roast (about 5-1/2 lb.), chine bone removed

1 Tbs. chopped fresh flat-leaf parsley

Kosher salt and freshly ground black pepper

1 head garlic, cloves peeled

2 lb. medium red or yellow potatoes, rinsed (you can use a combination, but they may cook at slightly different rates)
