2 pieces Eggplants (if using the big American variety) if using the Indian or Chinese, you will need about 5 or six.

1 to 2 cup olive oil

2 medium yellow onions

2-3 tomatoes chopped

2-3 cloves of garlic, chopped

2 tablespoons of drained capers, rinsed and chopped

3 tablespoons of pitted olives, chopped

1/4 cup of red wine Vinegar (you may use less than this)

1/4 cup of sugar (you may use less than this)

Salt and Peper (to taste)
