Cooking these as described - trading off dry and wet ingredients - is key. The batter is amazingly light.

Ingredients for 12 servings

3 cup unbleached all-purpose flour

2 1/2 tsp baking powder

1/4 tsp baking soda

1 scant tsp salt

1/2 tsp freshly ground nutmeg

3/4 cup plus 1 tbsp whole milk

2 tbsp buttermilk

1 1/2 stick ( 6 oz) unsalted butter, at room temperature

3/4 cup plus 2 tbsp granulated sugar

2 large eggs

4 - 6 tbsp unsalted butter

1 1/2 - 2 cup powdered sugar
