  • 1 cup frozen chopped onions
  • 2 Tbsps water
  • 1 Tbsp frozen apple juice concentrate
  • 2 cloves garlic, minced
  • 2 cups thinly sliced mushrooms
  • 2 cups frozen cooked black beans, thawed
  • 1 cup frozen sliced carrots, chopped
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 1/2 cups low-fat ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cans (14 ozs each) reduced-sodium tomato sauce
  • 1/4 cup shredded low-fat extra-sharp cheddar cheese
