4 oz pancetta, diced

2 oz crumbled cooked bacon (or 2 strips uncooked bacon, diced)

4 shallots, chopped

3 cloves garlic, chopped

8 oz sliced white mushrooms

1 large bunch rainbow chard, chopped

4 oz brebille (soft sheep cheese)

4 oz chevre (soft goat cheese)

2 Tbsp olive oil

2 oz shredded Romano or Parmigiano-Reggiano

salt and pepper to taste
