These are delicious. Some of my tea sandwiches I make way ahead of time as there is a lot of work to do for a tea. But these are so delicate I wouldn't make more than 2 hours ahead. Also because they are so delicate in flavor, I use a plain white bread (Pepperidge Farm is good because it usually has no air holes in the bread and it comes with concise edges). PS. I used to have a radish garden when I was a little girl.. and was so pleased to find the book that had this recipe!

Ingredients for 24 servings

1 cup mayonnaise

2 tablespoons sour cream

1 tablespoon freshly grated lemon zest

2 teaspoons coarse-grained mustard

2 teaspoons fresh lemon juice, or to taste

24 very thin slicess homemade-type white bread

1 cup mint leaves (from about 1 large bunch)

16 radishes, trimmed and sliced as thin as possible
