Ingredients for 2 servings

4 handfuls kale mixture or 4 large leaves of kale/borecole, rinsed, drained & tough stems removed

2 small Gala apples, rinsed and chopped

1 cup black quinoa, rinsed and picked through

2 ounces good quality goat cheese

3 tablespoons excellent quality extra virgin olive oil

juice and zest of one lemon

1/4 teaspoon good quality prepared horseradish

1 tsp. good quality dijon mustard

1 tsp. good quality honey

sea salt and fresh ground pepper to taste
