  • 1 1/4 lbs haddock, or Pacific cod, skinned and cut into 4 portions
  • 2 cups coleslaw mix, (see Tip)
  • 1/4 tsp salt
  • 1 8-oz can pineapple chunks or rings, drained and coarsely chopped
  • 2 Tbsps nonfat plain yogurt
  • 1/4 cup cornmeal
  • 1/8-1/4 tsp crushed red pepper
  • 2 tsps rice vinegar
  • 2 Tbsps reduced-fat mayonnaise
  • 8 slices whole-wheat country bread, toasted
  • 4 tsps canola oil, divided
  • 1/2 tsp Cajun seasoning
