2 x kaffir lime leaves , thinly sliced

2 cups butternut squash , cut into bite sized cubes

1 x red pepper , cut into bite sized pieces

1 tsp palm sugar , grated, or sugar

3 tbs fish sauce

2 tbs lime juice

1/4 cup peanut butter

1 pound shrimp , shelled and deviened

1/2 cup peas , fresh or frozen

1/4 cup cilantro , chopped

2 x green onions , sliced

1 x eye chili , thinly sliced

1/4 cup peanuts , roasted and chopped
