100.0ml rice flour , for dusting

1 lime , juiced

AVOCADO SALSA

100.0g watercress

extra-virgin olive oil

onion , finely chopped

100.0g palm sugar , or soft brown sugar

WATERCRESS SALAD

1.0 tbsp sweet chilli sauce

LIME AND SUGAR DRESSING

½ large red chilli , deseeded and thinly sliced

1 large avocado , cut into large dice

½ cucumber , peeled and sliced into noodle shapes on a mandolin or sliced lengthwise with a peeler

6 mint leaves, torn

300.0g tofu , drained and cut into thick batons
