100.0g rice noodles , soaked in boiling water until soft, rinsed in cold water and drained

200.0g cooked, peeled prawns

1.0 tbsp chilli paste or sauce

2 cm piece root ginger , grated

150.0g podded edamame (soy) beans , defrosted if frozen

1.0 tbsp fish sauce

2 grapefruit , 1 juiced and 1 segmented

½ small, red onion , thinly sliced into half moons

1.0 tsp golden caster sugar

mint or coriander to serve
