Ingredients for 6 servings

3 tablespoons soy sauce

4 boneless skinless chicken breast halves (about 1 1/2 lbs. total)

Caramelized Almonds

2 tablespoons brown sugar

1 tablespoon sugar

1 pinch cayenne pepper

3 medium carrots , peeled and grated

2 teaspoons butter

1/3 cup slivered almond

1 cup mayonnaise

1 inch piece fresh ginger , about 1 inch long, peeled and minced

DRESSING

3 tablespoons rice wine vinegar

2 tablespoons sesame oil

1/3 cup toasted slivered almond (or use 1/3 cup carmelized almonds from recipe above)

1 head iceberg lettuce , chopped

2 tablespoons soy sauce

1 bunch fresh cilantro leaves , leaves only (about 1 cup)

1 tablespoon sesame seed , toasted

1 1/2 cups crisp chow mein noodles

3 garlic cloves , chopped
