2 tablespoons peanut oil or vegetable oil

1 1/2 tablespoons ground coriander

fresh lemon juice (optional)

1/2 cup apricot preserves

2 garlic cloves , minced

1/2 cup currant or raisins

6 cups cooked brown rice

1 cup cut green beans

1/4 teaspoon ground cloves

2 medium zucchini , quartered lengthwise and sliced

1/2 teaspoon cayenne

garam masala (optional)

1/4 teaspoon ground cardamom

1 cup chopped dried apricot

1 1/2 teaspoons cinnamon

1 teaspoon turmeric

2 bananas

1 1/2 tablespoons ground cumin

2 firm tart green pears or apples , cored and cubed

4 cups coarsely chopped onions

1/2 red bell pepper , coarsely chopped

1/2 teaspoon ground fennel

1 cup raw peanuts or roasted peanuts

1 1/2 cups water

1 teaspoon grated peeled fresh gingerroot
