2 lbs fresh salmon filet cut in two equal pieces

1/3 c. kosher salt

1/3 c. sugar

1 T. pepper corns and 1 T. cilantro seeds, coarsely cracked in a mortar and pestle

1 bunch of cilantro

1 "mini" bottle of tequila (50 ml)

1 c. sour cream

1/3 red onion, minced

1 T. pickled jalapeno, minced

small handful of cilantro, finely minced

1 T. fresh lemon juice

salt and pepper

Mix well.
